I am a mother of 5 and nanna of 6. I cook large meals every day. I can’t seem to break that habit. Being that I only have 2 kids left at home, one of the older kids always stops by, with their family to eat dinner. I introduce my family and friends to a variety of flavors and dishes.

There are so many different ways to cook items and I try to learn them all. Every day is a new dish in our house. I ask them what they want to eat. When they tell me, I find a flavor and begin my creation. Their favorite flavor is an Asian type sauce that I use quite often. It is a soy sauce base. I can use that flavor on any meat but haven’t tried it on fish yet. I don’t use salt when cooking and rarely do they have to add it after plates are made.

I like to marinade but I don’t always have the time.. The right sauce makes or breaks the meal. I don’t like thick sauces, they tend to char the meat when searing or grilling. Extra virgin olive oil is a great item to use when grilling or pan searing. It only needs about 30 minutes along with garlic, pepper, and onion. These simple things will make meat taste so much better than trying to put seasoning on dry before cooking.Choosing The Right Flavor

I do however use a dry rub when smoking meat. I like working with celery salt, pepper, onion and garlic. Using apple flavored wood gives a good flavor. I have a crab apple tree in my backyard and pull twigs off that. It is my secret ingredient for grilling and smoking. No need to go buy wood chips when I have an apple tree! I love strong winds and storms because all I have to do is go pick up limbs out on the grass.

Apple has a very mild with a subtle sweet, fruity flavor. This smoking wood is ideal for poultry, beef, pork (especially ham), game birds, lamb and some seafood.If you don’t happen to have an Apple tree, you can find wood online or in your local Home Improvement Store, if you look hard.
